Does converting MP4 to MP3 lose quality?
A little, as every MP3 does: the MP4's AAC sound is decoded and encoded again. At 320 kbps the difference is very hard to hear, and 192 kbps is plenty for everyday listening.
Can I get the sound out without re-encoding it?
Yes, when the MP4's sound is AAC (nearly always) and you add no fades: choose M4A instead of MP3 and the sound is copied as it is, with no quality lost. M4A plays on phones, computers and most players, but not on some older MP3-only devices.
Which bitrate should I choose?
320 kbps for music you'll keep or play loud, 192 kbps (the default) for everyday listening, 128 kbps for speech — talks, podcasts, lectures — where a smaller file matters more.
